The primary role of general labor is to assemble and sanitize cheese equipment. This person's role will consist of making cheese into daisy wheels. This shall involve all processes related to pressing cheese and inserting into cheese forms.

DUTIES AND RESPONSIBILITIES: Included, but not limited to the following:

  • Check line process equipment to make sure they are clean and free of any foreign material.

  • Sanitize cheese cutter, presses, tables and all equipment used to produce cheese on the production floor.

  • Required to perform daily checks for sanitation with ATP swabs. Follow the procedure for this.

  • Assemble all equipment for cheese production and record any daily log counts.

  • Required to use all good GMP practices while handling cheese and between vats.

  • Required all line employee’s should always have clean aprons and gloves in good condition.

  • Must be able to run acidity on the cheese at appropriate times and record results.

  • Must be able to place cheese in hoop pans, work cheese presses and cheese cutter.

  • Must be able to place cheese in mold and lift drain boards while flipping cheese on boards.

  • Required all line employees must be able to record the vat information for each vat including amount produced, time of actions and conditions.

  • Each employee must take turns at different areas of the line process according to the schedule.

  • When making cheese on the open vats proper operations must be followed for the cheese type.

  • When making cheese on the open table barrels must be filled and placed in presses for draining.

  • Upon completion of the cheese run for the day clean up on the production floor is the responsibility of each line person.


  • Must have good interpersonal skills,

  • Must have some mechanical ability,

  • Must be accurate in recording information,

  • Must be punctual, neat, clean, and dependable,

  • Must be able to handle all physical requirements

  • Must be able to work variable scheduled hours,

  • Must comply with all AMPI GMP and safety requirements,

  • Must perform LOTO when necessary on all equipment


  • Crouch/Bend/ Stoop/ Squat/ Reach above Shoulder Frequently

  • Climb / Kneel / Balance / Push-Pull Continuously

  • Must Carry/ Lift Up to 50# Occasionally

**Occasionally equals 1-33% of the time

**Frequently equals 34-66% of the time

**Continuously equals 67%-100% of the time.
