Elior North America Production Manager 2 - Cura in Yankton, South Dakota

Position Summary

As part of the management team, supervises the food production process including purchasing, food specifications, meal preparation, service and sanitation. Orients and trains new employees in production areas. Develops standardized recipes and utilizes other production tools to ensure food quality and cost objectives are met. Participates in the planning and execution of special events.

Client, Resident, and Guest Relations

  • Visits all dining service areas to assess customer satisfaction levels. Evaluates customer suggestions and implements changes as needed.

  • Demonstrates a strong focus on guest satisfaction.

  • Develops rapport with staff in other departments.

Financial Results

  • Prepares food cost reports and reviews them with the Director of Dining Services.

  • Compiles and reviews weekly financial reports.

  • Monitors service areas to ensure proper portion control; monitors waste and makes adjustments as necessary.

Operational Execution

  • Ensures high quality, palatable and well presented foods are served to residents and staff in all areas.

  • Maintains a daily record of meals served to residents and staff on both sites.

  • Assists in the purchase of foods as necessary. Posts invoices and sends them to accounting for processing.

  • Assists in the development and implementation of production sheets, recipes, order books, temperature logs, etc as needed. Monitors staff to ensure systems are utilized correctly.

  • Develops menus to meet customer preferences, seasonal variations and cost objectives.

  • Ensures employee practices meet HACCP and infection control standards.

  • Knows Department of Health and Federal OBRA standards. Ensures team member practices comply with standards.

  • Communicates to staff regularly, both formally and informally; holds team meetings weekly to ensure staff awareness of production activities.

  • Enforces safety standards with team members Ensures safety problems are corrected to prevent staff injuries.

  • Ensures sanitation standards are enforced. Develops and implements routine cleaning procedures.

  • •Assists in the planning and execution of catered events in conjunction with other team members.

  • Assumes responsibility for the Food Service Director in his/her absence.

  • Ensures security of storage areas, computer equipment, personnel records, cash on hand and other private protected information.

  • Attends required meetings, training sessions and facility meetings as needed.

  • Adheres to the human resource policies and procedures of the facility, treats associates with fairness and respect.

  • Serves as a role model for employees by maintaining standards for appearance and dress, as well as attendance and meal breaks.

  • Orients and trains staff to ensure competence in job performance

  • Participates in the hiring, training, appraisal and discipline of hourly team members.

  • Works with management team to ensure a positive work environment and a clear understanding of HR policies and procedures.

  • Works with management team to maintain staff productivity, engagement and morale.

  • Maintains a plan for self-development and professional growth.

  • Ensures that team members are trained and competent to perform job duties.

  • Communicates with team members regularly both formally and informally, holds team meetings weekly and may hold pre-service meetings daily.

  • Maintains confidentiality of resident and staff records according to HIPAA guidelines.


  • 3+ years’ progressive culinary management experience preferably within a long term care setting.

  • Ability to organize workloads and meet time deadlines.

  • Strong interpersonal, communication and leadership skills.

  • Proficiency in Microsoft software programs.

  • Associate degree in culinary arts preferred.
